Before anything else, rule out a grease fire. Once the grill is safe, the usual culprits are a misleading lid thermometer, a knob that is not actually reducing the flame, or ambient heat. Work through the triage below and you will almost always find a free fix.

Rule out a grease fire
A grill running out of control is often a grease fire, not a hardware problem. Check this first.
Deep dive
A grease fire inside the firebox produces heat independently of what the burner knobs are doing. If turning the knobs down does not visibly reduce the flame or temperature, and you can see flames through the grill vents or around the lid, you likely have a grease fire in the drip tray or on the flavorizer bars.
The correct response to a grease fire:
- Close the grill lid. This cuts off oxygen and is often enough to extinguish the fire.
- Turn all burner knobs to off.
- Close the propane tank valve (clockwise).
- Step away and wait. Do not open the lid again for at least 5 minutes.
- If the fire persists or grows and escapes the grill, use baking soda, a fire extinguisher rated for grease fires, or call the fire department. Never use water.
Once the grill has cooled, clean the drip tray and flavorizer bars before your next cook. A grease fire that happens once will happen again if the grease is not removed.

Verify the actual grate temperature
Lid thermometers are often wrong. Check with a separate thermometer before assuming the grill is out of control.

Most gas grill lid thermometers measure air temperature at dome level, not at the cooking surface. Grate temperature is typically 50 to 100 degrees higher than the lid gauge reads. This means a lid reading of 400 degrees could mean 450 to 500 degrees at grate level. Conversely, a grill that looks dangerously hot from the lid gauge may actually be in range at the grate.
To get an accurate reading, use an instant-read thermometer held at grate level, or a grate probe clipped to the grill grate. If the grate temperature is within your intended cooking range, the lid thermometer is likely reading incorrectly, not the grill running hot.

Set up a two-zone fire
Turning one burner off gives you a cooler zone to move food when the grill runs hotter than you want.

A two-zone setup is the most practical heat management technique for a grill that runs consistently hotter than your recipe needs. Turn one burner (or two on a three-burner grill) completely off. The off side becomes your cool zone where food can finish cooking with ambient heat rather than direct flame.
Sear over the hot side, then move the food to the cool side and close the lid. The grill stays at its natural running temperature but the food is no longer directly over the flame. For fatty cuts and chicken, this also reduces flare-ups.
If even the burner on its lowest setting produces too much heat for what you are cooking, the two-zone method is often the only fix that does not require replacing parts.
Test each control valve
A knob that does not reduce the flame on its burner points to a faulty control valve.
Deep dive
Light one burner at a time and slowly cycle its control knob from high to low, watching the flame. On a correctly functioning burner, the flame should visibly reduce in size as you turn toward low. If you can turn the knob through its full range with no visible change in flame size, that control valve is likely faulty or stuck.
Try this on each burner individually. If one or more knobs show no response, the problem is isolated to those valves. If all knobs fail to throttle, the problem may be upstream in the manifold or regulator.
Note whether the valve turns smoothly or feels gritty and stiff. Grease can foul valve o-rings over time. If the knob turns but only in certain positions, the valve may need replacement rather than cleaning.
Do the regulator reset
A regulator stuck open is uncommon but can cause uncontrollable heat on all burners.

Regulators are designed to maintain consistent gas pressure. A failed-open regulator passes more gas than intended to all burners simultaneously. This is less common than the bypass (which restricts flow), but it does happen, especially on older units.
The reset procedure:
- Turn all burner knobs off.
- Close the propane tank valve.
- Disconnect the regulator from the tank.
- Wait 30 seconds.
- Reconnect and hand-tighten.
- Open the tank valve slowly over 3 to 4 seconds.
- Light the grill and check whether the burners now respond to the knobs.
If the reset restores normal throttling behavior, a temporary regulator fault was the cause. If the problem persists, the regulator has likely failed and needs replacement.
Free fixes not enough? It may be time for parts
If a specific knob does not throttle its burner, that control valve needs replacement. If all burners run hot and the regulator reset did not help, the regulator may have failed open. Both parts are typically inexpensive and straightforward to swap.

Control valves are grill-specific: search for your grill brand and model along with the valve type (most are either threaded or sleeved). Replace only the valve for the non-responding burner, not all valves at once.

If all burners are unresponsive after a regulator reset, replacement is the right call. Match LP (propane) or natural gas, and confirm hose length before ordering. LP and NG regulators are not interchangeable.

It can take 5 to 10 minutes for the temperature to drop noticeably after reducing all burners to low. If the lid thermometer is still reading high, wait a few minutes or measure at grate level with a separate thermometer. If the flame itself looks the same on low as on high, a stuck control valve or regulator issue is likely.
Yes, and that is the first thing to rule out. A grease fire produces sustained flame inside the firebox independent of the burner knobs. Signs: flames visible through the grill vents or licking the sides, a fire that does not respond to turning knobs down, smoke thicker and darker than normal cooking smoke. The food continues cooking with ambient heat but is no longer directly over flame. This is the most reliable way to manage a gas grill that runs hot without turning it completely off.
Yes. On a very hot day, a dark grill sitting in direct sun can preheat the metal before you even light it. Combined with high burner settings, this can push temperatures well above what the lid thermometer suggests. Position the grill in shade when possible on hot days, and start with lower burner settings than usual, raising them only if needed.
If a burner does not visibly dim when you turn its knob from high to low, or if you can turn the knob but the flame stays the same size, the control valve for that burner is likely faulty. Try lighting only one burner at a time and cycling each knob through its range to see if any fail to respond. A valve that does not throttle needs replacement.
It depends on the cause. Grill-is-hot-from-a-grease-fire is not safe to cook on: the fire needs to be extinguished first. Grill-is-hot-because-of-a-faulty-valve or a misread thermometer is safer but still risks charring food. If you can get into the safe cooking temperature range by adjusting technique (lower settings, two-zone, shorter cook times), you can cook.
